Das Tournedos oder The Strip wird wahrscheinlich selbst einigen Grillprofis nicht unbedingt viel sagen. Dabei ist The Strip eine der Steakvarianten, die man durchaus vom Grillrost genie\u00dfen kann. Wie kommt dieses Steak aber zu seinem Namen? Und wie l\u00e4sst sich The Strip am besten zubereiten.<\/p>\n<h2>The Strip &#8211; das Delmonico Steak<\/h2>\n<p>Beim The Strip handelt es sich um ein Steak, das verschiedene Namen hat. Au\u00dferhalb der USA ist dieses Steak auch als Clubsteak bekannt. In den Vereinigten Staaten k\u00f6nnt Ihr dem Steak auch unter der Bezeichnung New York Strip oder Kansas City Strip Steak begegnen. Die Beziehung zu New York d\u00fcrft Ihr \u00fcbrigens ruhig w\u00f6rtlich nehmen.<\/p>\n<p>Hintergrund: Im New Yorker Delmonico&#8217;s Restaurant (Manhattan) wurde im 19. Jahrhundert ein Steak aus der Zwischenrippe zubereitet. Aufgrund dieser Tatsache wird das Steak heute auch als New York Strip bezeichnet. Als Shell Steak wird das New York Strip bezeichnet, wenn es mit Knochen zu haben ist.<\/p>\n<p>Hinsichtlich der Qualit\u00e4t zeichnet sich das New York Strip als Kombination zwischen Zartheit und Geschmack. Dass dieses Steak so zart bleibt, ist einer einfachen Tatsache geschuldet. Die Muskelpartie wird weniger belastet, das Fleisch bleibt deshalb zarter.<\/p>\n<h2>New York Strip &#8211; die Zubereitung<\/h2>\n<p>Hinsichtlich der Zubereitung ist das The Strip die richtige Wahl, wenn es ums Grillen geht. Dabei kommt dem Steak zugute, dass es weniger stark mit Fett durchsetzt ist und sich beim Grillen weniger Flammen bilden. Ideal f\u00fcr das Grillen ist der Einsatz eines Grillrosts aus Gusseisen. Wie bei jedem Steak ist es durchaus kein Fehler, mit Gew\u00fcrzen sparsam umzugehen.
