Der Geschmack und das Aroma, welches Gew\u00fcrze verbreiten, ist nur ein Teil des Erfolgsgeheimnisses hinter jedem leckeren Burger. Die Konsistenz des Br\u00f6tchens, die Burger-Sauce, der Salat &#8211; f\u00fcr einen perfekten Burger muss einfach alles stimmen. Gerade die Details sind es, auf welche es bei der Zubereitung ankommt. Ein Grundsatz, der nicht nur f\u00fcr den Burger\u00a0als Ganzes gilt, sondern auch &#8211; oder gerade f\u00fcr den Patty.<\/p>\n<h2>Das Fleisch &#8211; am besten aus der Schulter<\/h2>\n<p>Klassischerweise wird f\u00fcr einen Burger Fleisch vom Rind verarbeitet. Der Eigengeschmack des Fleischs kommt am besten zur Geltung, wenn man sich auf bestimmte K\u00f6rperregionen konzentriert, deren Muskulatur beansprucht wurde. Die Schulter ist deshalb ein klassischer \u201eFleischlieferant\u201c f\u00fcr Patties.<\/p>\n<p>Wichtig f\u00fcr deren sp\u00e4tere Konsistenz ist der Fettanteil. Circa 20 Prozent gelten als optimal. Liegt Euer Fleisch darunter, wird der Patty schnell trocken &#8211; und f\u00e4llt auseinander. Zu trockene Patties sind im \u00dcbrigen nicht nur das Ergebnis, wenn zu wenig Fettanteil im Fleisch enthalten ist. Auch wenn Ihr versucht, die sich beim Grillen aufw\u00f6lbende Mitte mit dem Wender \u201ezurechtzur\u00fccken\u201c, wird das Patty trocken.<\/p>\n<p>Schlie\u00dflich habt Ihr gerade den Fleischsaft herausgedr\u00fcckt. Profis greifen einfach zu einem L\u00f6ffel und dr\u00fccken in die Mitte der Patties eine Vertiefung &#8211; um so ein sch\u00f6n gleichm\u00e4\u00dfiges Ergebnis zu erhalten.<\/p>\n<h3>Perfekte Patties &#8211; die W\u00fcrze gibt den Ton an<\/h3>\n<p>Burger-Patteis ohne Salz, Pfeffer und Gew\u00fcrze schmecken langweilig. Fakt ist: Ohne Gew\u00fcrze schmeckt der ganze Burger nicht. Gerade Einsteiger d\u00fcrfen aufatmen &#8211; Patties reicht in der Regel eine Prise Salz, Pfeffer, etwas Worcester- oder Sojasauce sowie Ketchup. Bereits mit diesen simplen Zutaten zaubert Ihr Geschmack auf den Teller.<\/p>\n<p>Nat\u00fcrlich d\u00fcrft Ihr der Fantasie hier freien Lauf lassen. Oregano, frische Kr\u00e4uter, Knoblauch, Curry oder Tr\u00fcffel- und K\u00fcrbiskern\u00f6l &#8211; was Euch schmeckt, kann auch im Burgerpatty landen.<\/p>\n<p>\u00dcbrigens: Das perfekte Patty ist etwa 2 &#8211; 2,5 cm dick.
