Einige \u2013 wie das Rib-Eye oder Entrec\u00f4te d\u00fcrfen durchaus mit ihrem Bekanntheitsgrad punkten. Andere Steaks, wie das Porterhouse oder Chateaubriand, machen nicht bei jedem Grillfan des \u00d6fteren Bekanntschaft mit der Grillzange. Dabei verdient das Porterhouse-Steak doch mehr oder minder die Bezeichnung des gro\u00dfen Bruders des T-Bone-Steaks. Beide \u2013 sowohl das T-Bone als auch das Porterhouse \u2013 werden aus dem flachen Roastbeef geschnitten. Charakteristisches Merkmal beider ist der Knochen.<\/p>\n<p>Und mit bis zu sechs Zentimeter Dicke kommt das Porterhouse auf ein stattliches Gewicht. Es kann durchaus passieren, dass das Ausgangsgewicht Eures Porterhouse auf dem Teller bei 800 \u2013 1.000 Gramm lag. Damit ist es nicht nur deutlich schwerer als ein vergleichbares T-Bone-Steak, ein Porterhouse-Steak kommt in der Regel auch auf einen wesentlich h\u00f6heren Filetanteil.<\/p>\n<h3>Wie kommt das Porterhouse zu seinem Namen?<\/h3>\n<p>Steaks wie dem Rib-Eye oder einem T-Bone-Steak sieht man den Namen an. Beim Porterhouse ist die Namensfindung \u2013 oder besser die Antwort auf die Frage, warum das Steak eigentlich Porterhouse-Steak hei\u00dft \u2013 etwas schwieriger.<\/p>\n<p>Es kursieren mehrere Varianten, wie das Porterhouse-Steak zu seinem Namen gekommen ist. Eine Geschichte f\u00fchrt nach Manhattan. Hier servierte zu Beginn des 20. Jahrhunderts ein gewisser Martin Morrison in seinem \u201ePorter House\u201c angeblich \u00fcbergro\u00dfe T-Bone-Steaks. Zachariah B. Porter \u2013 ebenfalls Gastronom\/Hotelier (allerdings in Massachusetts) \u2013 wird ebenfalls f\u00fcr die Namensgebung verantwortlich gemacht.<\/p>\n<p>Wie man das Blatt aber auch dreht und wendet \u2013 das Porterhouse ist de facto ein XXL-Steak und kann auf verschiedene Arten zubereitet werden. Der Klassiker d\u00fcrfte allerdings das scharfe Anbraten, w\u00fcrzen mit Salz und Pfeffer, und das Ziehen auf den gew\u00fcnschten Gargrad sein.
