Wer als Grillfan wirklich etwas auf sich h\u00e4lt, grillt mit Vorliebe ein saftiges Steak, das bereits durch sein Eigenaroma besticht und nicht viel mehr braucht als eine Prise grobes Salz. Gerade Einsteiger tun sich nicht nur mit dem perfekten Gargrad schwer. Auch die verschiedenen Steakvarianten sorgen f\u00fcr Fragezeichen. Ein Grund mehr, dem typischsten aller Grillgerichte etwas mehr Aufmerksamkeit zu widmen. Den Anfang macht das Chateaubriand \u2013 oder Doppellendensteak.<\/p>\n<p>Seinen Ursprung am Rind hat das Chateaubriand in der Lende bzw. Filet. Anatomisch gesehen handelt es sich hier um den Musculus psoas major, aus dem das Chateaubriand mittig herausgeschnitten wird. Mit einem Gewicht von bis zu 600 Gramm ist das Doppellendensteak beachtlich und kann problemlos von zwei Personen gegessen werden. Wie kommt das Doppellendensteak aber zu seinem Namen Chateaubriand?<\/p>\n<h3>Chateaubriand \u2013 eine britische Erfindung?<\/h3>\n<p>Das Chateaubriand verdankt \u2013 sofern man der kulinarischen Legende Glauben schenkt \u2013 seinen Namen dem Vicomte de Chateaubriand (1768 \u2013 1848). Allerdings entstand das Doppellendensteak nicht an der Loire oder im Bordeaux \u2013 sondern in London. 1822 als Botschafter in der britischen Metropole unterwegs, soll der pers\u00f6nliche Koch Chateaubriands Urheber dieser Steakvariation gewesen sein.<\/p>\n<p>Allerdings scheint diese Legende einer ernsthaften Pr\u00fcfung nicht wirklich standzuhalten, da Quellen zufolge die ersten Chateaubriand nach 1850 entstanden. In einer Zeit als, als der Vicomte de Chateaubriand bereits nicht mehr in den Genuss des Doppellendensteaks kommen konnte.<\/p>\n<p>Trotzdem geh\u00f6rt es auch heute noch zur K\u00fcche und zum Grillen dazu. Klassisch medium rare serviert, braucht es je nach Dicke pro Seite etwa 5 \u2013 6 Minuten. Zur klassischen Garnitur des Chateaubriand k\u00f6nnen unter anderem eine Gem\u00fcseplatte, Kr\u00e4uterbutter und eine Sauce b\u00e9arnaise geh\u00f6ren.
