Klassiker auf dem Weihnachtsteller sind Gans und Ente oder Karpfen. Immer h\u00e4ufiger wird aber auch Wild an den Feiertagen zubereitet. Und nat\u00fcrlich klappt ein leckerer Reh- oder Wildschweinbraten\u00a0nicht nur auf dem Ofen. Auch vom Grillrost kann der festliche Braten richtig lecker werden. Deshalb heute ein paar Tipps f\u00fcr die Zubereitung von Wild.<\/p>\n<h2>Wild immer gut durchbraten<\/h2>\n<p>Rindfleisch wird gern medium oder rare verspeist. Beim Thema Wild gilt allerdings die Devise, dass die Fleischst\u00fccke durchzugaren sind. Obwohl immer wieder gern empfohlen, ist rosa gebratenes Wild durchaus ein Risiko, wenn es um die Belastung mit Keimen geht. Anders als das Fleisch gew\u00f6hnlicher Schlachtbetriebe unterliegt Wild einer geringeren Kontrolle.<\/p>\n<h2>Mageres Wild eignet sich zum Spicken oder Bardieren<\/h2>\n<p>Wildfleisch ist im Vergleich zum Fleisch der Haustiere oft deutlich magerer und neigt schneller zum Austrocknen. Um die Saftigkeit zu erhalten, kann daher gespickt oder bardiert werden. Beim Bardieren werden die Fleischst\u00fccke mit Speckscheiben umh\u00fcllt, beim Spicken dagegen Speckst\u00fccke ins Fleisch mit einer speziellen Nadel eingebracht.<\/p>\n<h2>Schmoren mit Wein, Bier oder Fleischbr\u00fche<\/h2>\n<p>Schmorgerichte werden klassisch mit Wasser zubereitet. Beim Wild k\u00f6nnt Ihr ruhig etwas tiefer in die Trickkiste greifen. Wein, Fleischbr\u00fche oder Bier sind zum Schmoren ebenfalls geeignet &#8211; und geben dem Fleisch eine besondere Note.<\/p>\n<h2>Setzen Sie auf den Eigengeschmack von Wild<\/h2>\n<p>Wild hat grunds\u00e4tzliche einen besonderen Eigengeschmack. Beim Zubereiten sollten Sie diese Tatsache ber\u00fccksichtigen. Zu starke und intensive Gew\u00fcrze verdecken den Wildgeschmack, sie zerst\u00f6ren ihn.
