Allerdings entscheidet nicht nur das K\u00f6nnen des \u201eGrillmeisters\u201c \u00fcber den Geschmack. Wie so oft beim Essen gibt die Fleischqualit\u00e4t den Takt vor &#8211; und entscheidet, wie das Steak schmeckt. Fleisch ist doch Fleisch &#8211; k\u00f6nnte mancher Laie jetzt sagen. In den letzten Jahren haben sich allerdings einige Rassen in besonderer Weise herauskristallisiert.<\/p>\n<p>Echte Steakfans kennen einen der \u201eKlassiker\u201c &#8211; das Black Angus. H\u00e4ufig als Irisches Black Angus beworben, verbirgt sich dahinter eine Rasse, deren Ursprung eigentlich woanders liegt, und zwar in Schottland. Das Aberdeen Angus wurde zuerst in den Counties Aberdeenshire bzw. Angus gez\u00fcchtet, von denen aus es seinen Siegeszug rund um den Globus antrat. Inzwischen wird die Rasse u. a. in Nordamerika gehalten und hat auch in Deutschland Fans gefunden. Gerade die Leichtkalbigkeit macht sie zum idealen Kandidaten f\u00fcr Einkreuzungen in andere Rassen.<\/p>\n<h3>Das Fleisch<\/h3>\n<p>Angus-Rinder haben in den Augen der meisten Experten mehrere positive Eigenschaften. Einerseits bringen sie eine hervorragende Weideeignung mit. Auf der anderen Seite kommt der Verwendung als Fleischrasse ein hohes Futteraufnahmeverm\u00f6gen zugute. Insgesamt entsteht beim Angus ein Fleisch, das sich durch Zartheit und Marmorierung auszeichnet. Kr\u00e4ftig rot in der Farbe wird es von Grill-Fans und Gourmets gesch\u00e4tzt. Einen ganz besonderen Geschmack entwickelt das Angus in der Trockenreifung.<\/p>\n<p>\u00dcbrigens: Wenn Ihr die Gelegenheit habt und Angus-Rinder auf der Weise beobachten k\u00f6nnt, solltet Ihr Euch nicht \u00fcber die fehlenden H\u00f6rner wundern.
