Gerade als Steaklieferant stehen Rinder hoch im Kurs. Allerdings greifen passionierte Liebhaber nicht bei jedem Fleisch zu &#8211; es darf ruhig etwas spezieller sein. Black Angus oder das Simmentaler Rind sind nur zwei Beispiele. Es gibt also gute Gr\u00fcnde, sich mit dem Rindfleisch und dessen Lieferanten etwas genauer zu besch\u00e4ftigen. Im ersten Teil unserer kleinen Rundreise durch die Welt der Rinderrassen geht es ums Charolais Rind.<\/p>\n<h2>Wei\u00df und kr\u00e4ftig &#8211; das Charolais<\/h2>\n<p>Beim Charolais handelt es sich um eine Rasse, die in erster Linie der Fleischproduktion dient und deren Bezeichnung sich durchaus R\u00fcckschl\u00fcsse auf die Herkunft ableiten lassen. Das Charolais Rind stammt aus der Region Burgund und hat seinen Namen von der franz\u00f6sischen Gemeinde Charolles.<\/p>\n<p>Besonders auff\u00e4llig am D\u00e9partement Ni\u00e8vre ist das wei\u00dfe bis cremefarbene Erscheinungsbild und ein stattliches Gewicht von bis zu 1.300 Kilogramm (Bullen) bzw. 900 Kilogramm (K\u00fche). Urspr\u00fcnglich wird die Herkunft dieser Rasse dem D\u00e9partement Ni\u00e8vre zugeordnet. Entsprechend der Tatsache, dass es beim Charolais vordergr\u00fcndig um die Fleischgewinnung geht, spielt die Nutzung der Rasse zur Milchproduktion keine Rolle, was der Fleischqualit\u00e4t zugute kommt.<\/p>\n<h2>Das Fleisch<\/h2>\n<p>Beim Charolais Rind entwickelt sich in der Regel eine ausgepr\u00e4gte Muskulatur mit geringem Fettanteil. Trotzdem ist das hellrote Fleisch dieser Rasse von feinen Fett\u00e4derchen durchzogen &#8211; es bleibt beim Braten saftig und hat inzwischen auch au\u00dferhalb Frankreichs einen guten Ruf. Um diesem Anspruch gerecht zu werden, setzen Z\u00fcchter auf ein ad\u00e4quate Haltung der Rinder &#8211; was auch eine l\u00e4ngere Weidezeit einschlie\u00dfen kann. Dar\u00fcber hinaus ist nat\u00fcrlich die weitere Verarbeitung von Bedeutung.
