Besonders beliebt ist bei vielen Grill-Fans alles, was den Gerichten eine gewisse Sch\u00e4rfe verleiht. Pfeffer, Chili, Senf, Meerrettich oder Knoblauch sind deshalb in fast jedem gut sortierten Gew\u00fcrzregal\u00a0zu finden. Ist Sch\u00e4rfe aber gleich Sch\u00e4rfe? Oder besser: Was sorgt bei den einzelnen Gew\u00fcrzen eigentlich daf\u00fcr, dass sie scharf schmecken?<\/p>\n<p><!--wpads#content--><!--wpads#content1--><!--wpads#content2--><\/p>\n<p>Ausl\u00f6ser der geschmacklichen Sch\u00e4rfe sind Stoffe, die in Pfeffer, Senf oder Chili enthalten sind, welche mit W\u00e4rme- und Schmerzrezeptoren interagieren. Besonders bekannt sind Capsaicin und Senf\u00f6le.<\/p>\n<h2>Was macht Pfeffer scharf?<\/h2>\n<p>Eines der bekanntesten Gew\u00fcrze ist und bleibt Pfeffer. F\u00fcr dessen Sch\u00e4rfe verantwortlich ist das sogenannte <strong>Piperin<\/strong>. Fr\u00fcher ein sehr teures Gew\u00fcrz ist Pfeffer heute beim Grillen Standard und wird neben dem W\u00fcrzen auch f\u00fcr Marinaden verwendet. \u00dcbrigens: Szechuanpfeffer hat nur wenig mit dem herk\u00f6mmlichen schwarzen Pfeffer gemein. Die Sch\u00e4rfe entsteht durch andere Stoffe &#8211; sogenannte Amide &#8211; und ist durch eine andere Sch\u00e4rfewahrnehmung gekennzeichnet.<\/p>\n<h2>Senf und Meerrettich<\/h2>\n<p>F\u00fcr die Sch\u00e4rfe von Senf werden Senf\u00f6le im Allgemeinen verantwortlich gemacht. Hinter der Sch\u00e4rfe verbirgt sich aber eine Reaktion der Senfglykoside zu Isothiocyanaten. Das Charakteristikum der Senf- und Meerrettichsch\u00e4rfe ist die tr\u00e4nenreizende Wirkung und das \u201ein die Nase steigen\u201c fl\u00fcchtiger Anteile.<\/p>\n<h2>Chili &#8211; sch\u00f6n scharf<\/h2>\n<p>Zu den bekanntesten Sch\u00e4rfelieferanten geh\u00f6rt immer noch Chili. Ausgel\u00f6st durch das Capsaicin, kommt das Sch\u00e4rfeempfinden durch eine Reizung von Schmerzrezeptoren zustande. Was Chili besonders macht, ist unter anderem das <strong>lange Anhalten des Sch\u00e4rfeempfindens<\/strong>. Da <strong>Capsaicin<\/strong> selbst in geringeren Mengen noch wahrgenommen werden kann, sollte es beim W\u00fcrzen eher sparsam eingesetzt werden.<\/p>\n<p><strong>Fazit<\/strong>: Sch\u00e4rfe hat viele unterschiedliche Ursachen. Allerdings kann sie &#8211; richtig genutzt &#8211; dazu beitragen, das allgemeine Geschmacksempfinden zu beeinflussen.
