Doch beim Verbrennen der Holzkohle <strong>qualmt<\/strong> es zum Teil <strong>erheblich.<\/strong> Doch auch bei der Herstellung\u00a0der Grillkohle steigt viel Rauch auf. F\u00fcr einen <strong>10-Kilo-Sack\u00a0Holzkohle<\/strong> werden in der Herstellung<strong> 100 Kilogramm Holz ben\u00f6tigt.<\/strong><\/p>\n<h2><strong>Holz werden fl\u00fcssige und gasf\u00f6rmige Bestandteile entzogen<\/strong><\/h2>\n<p>In Deutschland selbst gibt es nur noch <strong>wenige traditionelle K\u00f6hlereien,<\/strong> die aktiv sind. Der Gro\u00dfteil des <strong>Brennstoffes<\/strong> f\u00fcr den Holzkohlegrill stammt aus <strong>Stahlkesseln.<\/strong> Mit wenigen Worten ist ein langer Prozess erkl\u00e4rt: Durch die <strong>Verkohlung<\/strong> von Holz werden dem Material <strong>fl\u00fcssige<\/strong> und <strong>gasf\u00f6rmige Bestandteile,<\/strong> wie Wasserstoff, Spuren von Kohlendioxid und organische S\u00e4uren <strong>entzogen.<\/strong> Die festen Bestandteile, wie beispielsweise Kohlenstoff, bleiben mit weniger Volumen und deutlich weniger Gewicht zur\u00fcck.<\/p>\n<p><!--wpads#content--><!--wpads#content1--><!--wpads#content2--><\/p>\n<h2><strong>Holzkohle schwelt mehrere Tage im Meiler<\/strong><\/h2>\n<p>Der traditionelle <strong>Erdmeiler<\/strong> besteht aus mehreren <strong>Etagen Holz,<\/strong> die zu einem Kegel aufget\u00fcrmt und mit <strong>Laub,<\/strong> <strong>Fichtenreisig und Moos<\/strong> abgedeckt werden. Aufgeworfene Erde und stabilisierende St\u00fctzen schlie\u00dfen den Meiler ab. Schlie\u00dflich wird der <strong>Meiler angez\u00fcndet,<\/strong> damit das darin befindliche Holz unter Sauerstoffabschluss verkohlt bzw. verschwelt. F\u00fcr eine gleichm\u00e4\u00dfige Verkohlung steuert der K\u00f6hler die Luftzufuhr gezielt mit L\u00f6chern, die mithilfe langer St\u00e4be in den Meiler gestochen werden.<\/p>\n<h2><strong>Traditionelles Handwerk des K\u00f6hlers fast ausgestorben<\/strong><\/h2>\n<p>Ein heikles Unterfangen, denn <strong>zuviel Sauerstoff entflammt<\/strong> das Holz, zu <strong>wenig Sauerstoff<\/strong> f\u00fchrt zum <strong>Erl\u00f6schen<\/strong> der Glut. Anfangs ist der Rauch sehr dunkel, sp\u00e4ter bl\u00e4ulich und transparent. Nach <strong>einigen Tagen<\/strong> kann die Holzkohle <strong>geerntet<\/strong> und <strong>verpackt<\/strong> werden. Nicht verkohlte Holzst\u00fccke werden beim Bau des n\u00e4chsten Meilers wiederverwendet.
