Die Geschm\u00e4cker gehen jedoch weit auseinander. W\u00e4hrend jemand voller Genuss ein <strong>blutiges<\/strong> Steak verzehrt, mag ein anderer das Fleisch lieber <strong>durchgebraten.<\/strong> Es ist eine gro\u00dfe Kunst, das Rindfleisch genau auf den Punkt zu garen, abh\u00e4ngig von der Dicke und der Marmorierung der Ware.<\/p>\n<h2>Vielfalt vom Chateaubriand bis hin zum Sirloinsteak<\/h2>\n<p>Das Rinderfilet ist besonders <strong>zart,<\/strong> <strong>ohne Fettrand<\/strong> und <strong>fein<\/strong> im Geschmack. Ein Filetsteak bringt knapp<strong> 200 Gramm<\/strong> auf die Waage. Ein Chateaubriand, ein doppeltes Rinderfilet, wiegt sogar bis zu 500 Gramm. Aus dem <strong>Roastbeef<\/strong> stammt das <strong>Rumpsteak,<\/strong> welches durch seinen Fettrand einen herzhaften Geschmack bekommt. Ein <strong>Sirloinsteak<\/strong> wiegt als doppeltes Rumpsteak mit rund <strong>400 Gramm<\/strong> auch doppelt soviel.<\/p>\n<p>Aus der <strong>Hochrippe<\/strong> des Rinds stammt das <strong>Entrec\u00f4te<\/strong> oder <strong>Zwischenrippenst\u00fcck.<\/strong> Das Fettauge im Rib-Eye-Steak, ebenfalls aus dem Zwischenrippenst\u00fcck geschnitten, verleiht dem Fleisch einen saftig-w\u00fcrzigen Geschmack. Das <strong>H\u00fcftsteak<\/strong> mit seiner feinen Maserung und dem kr\u00e4ftig-w\u00fcrzigem Geschmack kommt aus dem Herzen der H\u00fcfte.<\/p>\n<p><!--wpads#content--><!--wpads#content1--><!--wpads#content2--><\/p>\n<h2>Daumenprobe und Fleischsaft verr\u00e4t Garzustand<\/h2>\n<p>Steakfleisch sollte vor dem Grillen <strong>trocken getupft<\/strong> werden. Damit sich die Poren schlie\u00dfen und das Steak sch\u00f6n saftig bleibt, das Fleisch von rundum<strong> scharf anbraten.<\/strong> Die Kruste ist au\u00dferdem wichtig f\u00fcr <strong>Farbe<\/strong> und <strong>Geschmack.<\/strong> Beim Wenden keinesfalls in das Fleisch stechen, um Auslaufen von Fleischsaft zu vermeiden. Mithilfe der Daumenprobe kann das Steak auf seinen Garzustand gepr\u00fcft werden. Je weniger das Steak auf Druck nachgibt, umso durchgebratener ist es.
