Es hat eine schlanke Tropfenform, wobei der dickere Teil des Filets als Filetkopf bezeichnet wird. Das Filet hat keine starke Fettmarmorierung und ist daher sehr mager. Dank den feinen und zarten Fleischfasern ist es gegen\u00fcber einem Rumpsteak o.\u00e4. sehr zart und zergeht, wenn medium gebraten, f\u00f6rmlich auf der Zunge. Wir empfehlen das Filet nur kurz auf hoher Hitze anzubraten, soda\u00df Ihr sch\u00f6ne R\u00f6staromen bekommt. Den weiteren Garprozess k\u00f6nnt Ihr auf indirekter Hitze bis zur gew\u00fcnschten Kerntemperatur durchf\u00fchren.
