Einfaches Beispiel gef\u00e4llig: <strong>Pulled Pork.<\/strong> Wie \u2013 kennt Ihr nicht? Kein Problem, denn es geht Euch wie vielen anderen Grill-Fans, die bisher mit Holzkohle, Steak, Bier und einem einfachen Grill zufrieden waren.<\/p>\n<p>Pulled Pork ist nur eine BBQ-Spezialit\u00e4t von vielen, die es bisher nach Deutschland geschafft haben, aber trotzdem bislang nur dem Kreis wirklicher BBQ-Fans das Wasser im Mund zusammenlaufen lassen. <strong>Insider<\/strong> sehen im Pulled Pork sogar eine <strong>K\u00f6nigsdisziplin<\/strong> des BBQ. Warum? Die <strong>Zubereitung<\/strong> hat es in sich. Und zieht sich inklusive der Vorbereitungen \u00fcber <strong>mehrere Tage<\/strong> hin.<\/p>\n<h2><strong>Pulled Pork \u2013 super zart &amp; saftig<\/strong><\/h2>\n<p>Der f\u00fcr deutsche Ohren etwas eigent\u00fcmlich wirkende Name Pulled Pork geht auf die Tatsache zur\u00fcck, dass das <strong>Fleisch<\/strong> nach dem Garen <strong>nicht geschnitten<\/strong> wird. Es ist so <strong>saftig<\/strong> und <strong>zart<\/strong> \u2013 es l\u00e4sst sich einfach mit zwei <strong>Gabeln auseinanderziehen.<\/strong> Bis dahin legt das Pulled Pork einen weitern Weg zur\u00fcck. Idealerweise eignet sich daf\u00fcr ein ganzer <strong>Schweinenacken,<\/strong> mit dem sich \u2013 je nach Gr\u00f6\u00dfe und Appetit \u2013 fast ein Dutzend hungriger M\u00fcnder stopfen l\u00e4sst.<\/p>\n<p>Wer das Pulled Pork <strong>marinieren<\/strong> und mit einem Gew\u00fcrzmantel, dem Rub, versehen will, muss bereits<strong> mehrere Tage<\/strong> vor dem eigentlichen BBQ mit den Vorbereitungen beginnen. Schlie\u00dflich muss der Nacken von mehreren Kilo Kampfgewicht durchmarinieren und die Aromen des Rub in Ruhe aufnehmen k\u00f6nnen.<\/p>\n<p><!--wpads#content--><!--wpads#content1--><!--wpads#content2--><\/p>\n<h2><strong>Garen, ohne anzubrennen<\/strong><\/h2>\n<p>Was ist nun aber eigentlich das <strong>Besondere<\/strong> am Pulled Pork? Wahrscheinlich die <strong>Garzeit<\/strong> \u2013 zumindest f\u00fcr den Mitteleurop\u00e4er. Garzeiten von <strong>zehn, zw\u00f6lf oder sechzehn Stunden<\/strong> haben in der deutschen K\u00fcche Seltenheitswert. Der Grund: Die <strong>Gartemperatur<\/strong> f\u00fcr Pulled Pork liegt bei \u201egerade\u201c <strong>110\u00b0C \u2013 130\u00b0C.<\/strong><\/p>\n<p>Das Fleisch wird extrem <strong>langsam<\/strong> &amp; <strong>schonend<\/strong> zubereitet. Bis die <strong>Kerntemperatur<\/strong> bei rund <strong>95\u00b0C<\/strong>\u00a0 liegt, k\u00f6nnen schon einige Stunden vergehen.
