Gilt es doch <strong>alles andere<\/strong> als <strong>einfach<\/strong> im Handling und hat einen <strong>Eigengeschmack,<\/strong> der nicht immer Freunde findet. Allerdings wird Wild oft zu <strong>Unrecht<\/strong> stiefm\u00fctterlich behandelt. Mit ein paar Kniffen lassen sich Reh, Hirsch oder Wildschwein in ein <strong>leckeres<\/strong> &amp; <strong>saftiges<\/strong> Grillgericht verwandeln.<\/p>\n<h2><strong>Wild vor dem Grillen marinieren<\/strong><\/h2>\n<p>Einer der <strong>wichtigen Schritte<\/strong> vor dem Grillen ist beim Wild das <strong>Marinieren.<\/strong> Hierzu eignen sich besonders Gew\u00fcrze wie <strong>Wachholder, Thymian<\/strong> oder <strong>Lorbeer,<\/strong> die mit Buttermilch oder Joghurt vermengt werden. Je nach Gr\u00f6\u00dfe der Fleischst\u00fccke muss das Wild <strong>mehrere Stunden<\/strong>, vielleicht auch<strong> 1 \u2013 2 Tage<\/strong> in der Marinade ziehen und ist anschlie\u00dfend grillfertig.<\/p>\n<p><strong>Jungwild<\/strong> ist dagegen von Haus aus <strong>zarter<\/strong> und kann daher ohne das Bad in der Marinade auf dem Grill landen. Zu <strong>kr\u00e4ftige Marinaden<\/strong> sind<strong> alles andere als optimal<\/strong>, da sie den typischen <strong>Wildgeschmack \u00fcberdecken.<\/strong> In diesem Fall h\u00e4tte es auch wesentlich g\u00fcnstigeres Fleisch getan.<\/p>\n<h2><strong>Garzeiten f\u00fcr Wild<\/strong><\/h2>\n<p>Nach der Pflicht kommt die <strong>K\u00fcr.<\/strong> Diese Tatsache gilt insbesondere f\u00fcr das Grillen von Wild. Es handelt sich von Haus aus um <strong>mageres Fleisch.<\/strong> Daher neigt Wild bei zu langen Garzeiten schnell zum <strong>Austrocknen,<\/strong> wird <strong>z\u00e4h<\/strong> und ist alles andere als ein Knaller auf der Zunge. Der <strong>richtige Garpunkt<\/strong> ist f\u00fcr Wild daher das A und O. Sch\u00fctzenhilfe geben <strong>Bratenthermometer<\/strong> oder die <strong>Daumen-Fingerregel.<\/strong><\/p>\n<p>Ein kleiner Tipp: Mit etwas <strong>Speck umwickelt<\/strong> trocknet das Fleisch nicht ganz so schnell aus.
