Fast k\u00f6nnte man dem Verdacht erliegen, marinieren ist extra f\u00fcr das Grillen erfunden worden. Weit gefehlt \u2013 Marinaden sind wesentlich <strong>\u00e4lter<\/strong> als das \u201emoderne\u201c Grillen.<\/p>\n<p>Allerdings war die Marinade fr\u00fcher nicht in erster Linie als nat\u00fcrlicher <strong>Geschmacksverst\u00e4rker<\/strong> gedacht. Vielmehr handelte es sich um eine Variante, wie in fr\u00fcheren Jahrhunderten Fleisch, das bekanntlich ungesch\u00fctzt schnell verdirbt, <strong>haltbarer<\/strong> gemacht werden konnte. Eine Tatsache, die mit Blick auf die fr\u00fchere Verwendung von <strong>Salzlake<\/strong> als Marinade noch offensichtlicher wird. Dient es doch auch heute noch der Haltbarmachung von Lebensmitteln.<\/p>\n<h2><strong>Marinade \u2013 Aromatr\u00e4ger &amp; Weichmacher<\/strong><\/h2>\n<p>Heute steht dagegen weniger das Haltbarmachen von Fleisch im Vordergrund. Stattdessen ist die Funktion der Marinade als <strong>Aroma-<\/strong> und <strong>Geschmackstr\u00e4ger<\/strong> gefragt. Die in der Marinade enthaltenen <strong>Gew\u00fcrze<\/strong> &amp; <strong>Aromen<\/strong> ziehen ins Fleisch ein und verleihen ihm einen ganz besonderen Geschmack. Gleichzeitig wird durch S\u00e4uren in der Marinade das Fleisch <strong>zarter<\/strong> und <strong>leichter<\/strong> bek\u00f6mmlich.<\/p>\n<p>Damit sich die Wirkung der Marinade voll entfalten kann, muss das Fleisch mitunter \u00fcber <strong>mehrere Tage<\/strong> eingelegt werden. Als Faustregel gilt: Pro Tag durchsetzt die Marinade einen Zentimeter Fleisch. Wer also einen Braten von 4 Zentimeter Dicke durchmarinieren will, muss in der Theorie 48 h warten.<\/p>\n<h2><strong>Richtig marinieren<\/strong><\/h2>\n<p>Um die Wirkung der Marinade voll zur Geltung kommen zu lassen, muss das Fleisch <strong>komplett<\/strong> mit der Marinade <strong>bedeckt<\/strong> sein und sollte k\u00fchl ruhen. Als Basis f\u00fcr das Marinieren kommen unterschiedliche Zutaten in Frage. Beliebt sind <strong>\u00d6le<\/strong> und <strong>Essig.<\/strong> Beide ergeben zusammen mit Gew\u00fcrzen leckere Marinaden, die auch einen exotischen Touch haben k\u00f6nnen.<\/p>\n<p>Ebenfalls denkbar ist der Einsatz von <strong>Kr\u00e4uterpasten,<\/strong> mit denen das Fleisch rundum eingestrichen wird und die langsam ins Fleisch einziehen.
