Pro Jahr verzehren die Deutschen mehr als<strong> 800 Gramm Senf.<\/strong> Die gelbe W\u00fcrzpaste gibt es in verschiedenen <strong>Sch\u00e4rfegraden,<\/strong> sodass f\u00fcr jeden Geschmacketwas dabei sein d\u00fcrfte. Ob s\u00fc\u00df, scharf, w\u00fcrzig oder mild \u2013 Senf peppt Bratwurst und Steaks geschmacklich auf.<\/p>\n<h2><strong>Senfsch\u00e4rfe dank \u00e4therischer \u00d6le<\/strong><\/h2>\n<p>In den Senfsamen sind neben dem nussig-milden <strong>Senf\u00f6l<\/strong> auch <strong>Eiwei\u00df<\/strong> sowie die f\u00fcr den scharfen Geschmack zust\u00e4ndigen <strong>Glykoside<\/strong> enthalten. Durch das Mahlen der Senfsamen werden die scharfen<strong> \u00e4therischen \u00d6le<\/strong> freigegeben. Diese regen den Appetit und die Verdauung von Fett an. Bereits vor <strong>3000 Jahren<\/strong> wurde Senf in <strong>China<\/strong> sehr gesch\u00e4tzt. Zun\u00e4chst gelangte die W\u00fcrzpaste \u00fcber Kleinasien nach Griechenland. Sp\u00e4ter wurde sie in ganz Europa ein wichtiges Gew\u00fcrz. In <strong>Deutschland<\/strong> wird seit <strong>1726<\/strong> Senf hergestellt.<\/p>\n<h2><strong>Gelbe W\u00fcrzpaste mit vielf\u00e4ltigem Einsatz <\/strong><\/h2>\n<p>So variantenreich Senf geschmacklich sein kann, so <strong>vielf\u00e4ltig<\/strong> l\u00e4sst er sich in der K\u00fcche einsetzen. Aufgepeppt werden durch die gelbe W\u00fcrzpaste neben <strong>Fisch-<\/strong> und <strong>Fleischgerichten<\/strong> auch <strong>Gem\u00fcse, Saucen, Marinaden<\/strong> oder <strong>Dips.<\/strong> Im Senf\u00f6l enthaltene Pflanzenstoffe heben im \u00dcbrigen die krebserregende Wirkung von Benzyprenen, die durch in die Glut tropfendes Fett entstehen, nahezu vollst\u00e4ndig auf.<\/p>\n<h2><strong>Senf von A bis Z<\/strong><\/h2>\n<p>Inzwischen gibt es vielerlei <strong>Senfvariationen<\/strong> im Supermarktregal. Die Grillparty wird nicht nur mit <strong>mittelscharfem<\/strong> Tafelsenf bereichert, sondern durch <strong>Brutzelsenf<\/strong> oder <strong>Brutzelsaucen<\/strong> verschiedener Hersteller. Neben den bekannten und traditionellen Geschmacksrichtungen sind inzwischen auch exotische Varianten mit <strong>Honig<\/strong> und <strong>Chili<\/strong> vertreten.
