Leider sieht man es dem Steak im Supermarkt unter seiner Verpackung nicht an, woher es kommt. Dabei lohnt sich ein Blick hinter die Kulissen. Abseits der modernen Hochleistungsrassen erleben seit einiger Zeit gerade die alten Rinder- und Schweinerassen wachsendes Interesse. Und genau so eine soll es heute wieder gehen \u2013 das Berkshire.<\/p>\n<h2>Berkshire \u2013 eine alte englische Rasse<\/h2>\n<p>Wie die Rassebezeichnung nahelegt, handelt es sich bei Berkshire-Schweinen um eine Rasse, die ihre Wurzeln in Gro\u00dfbritannien hat. Genauer gesagt bewegen wir uns in die Grafschaft Berkshire in South East England. Hier wurde eine Schweinerasse mit schwarzen Fellkleid und hellen F\u00fc\u00dfen bereits in der Zeit vor dem Englischen B\u00fcrgerkrieg im 15. Jahrhundert gehalten. Truppen Oliver Cromwells entdeckten die Rasse und f\u00fchrten sie auch in anderen Landesteilen ein. Mit bis zu 280 Kilogramm Gewicht (Eber) und fr\u00fchreif zeichnete es sich besonders durch den hohen Fettanteil aus. Inzwischen ist das Berkshire \u2013 wie viele Hausschweinrassen in Deutschland \u2013 eine bedrohte Rasse. Der Grund ist nicht nur der Fettanteil. Berkshire-Schweine sind gesellige Tiere, die im Freien gehalten werden wollen. \u00dcbrigens: Als Kagoshima Kurobuta sind Zuchtlinien des Berkshire sogar in Japan eine Spezialit\u00e4t.<\/p>\n<h2>Berkshire-Schwein \u2013 das Fleisch<\/h2>\n<p>In Deutschland ist das Fleisch der Berkshire-Schweine bislang ein Geheimtipp. Dies liegt nicht nur daran, dass alte Schweinerassen erst allm\u00e4hlich wieder ins Rampenlicht r\u00fccken. Derzeit ist die Anzahl der Tiere in deutschen Zuchtbetrieben einfach relativ \u00fcberschaubar. Warum solltet Ihr Berkshire einfach mal probieren? Die Rasse besitzt einen h\u00f6heren Fettanteil und intramuskul\u00e4res Fett. Gleichzeitig erreicht die Haltung im Freiland eine besondere Fleischqualit\u00e4t, die man schmeckt. Der Eigengeschmack steht im Kontrast zum Schweinefleisch, wie Ihr es bisher kennt.
