Wir widmen uns immer wieder gern der \u201eWarenkunde\u201c. Schlie\u00dflich will man als Griller ja wissen, was vor einem auf dem Grillrost liegt. Deshalb gibt\u00b4s heute mal wieder was Neues aus der Rubrik: Kenne Dein Fleisch, es geht ums Sus scrofa. Noch nie geh\u00f6rt? Wie w\u00e4re es damit \u2013 Wildschwein.<\/p>\n<p>Richtig \u2013 es darf sich heute mal wieder ums Thema Wild drehen. Eines vorweg: Auch wenn man gegen\u00fcber Wildgerichten vom Grillrost im ersten Moment vielleicht skeptisch ist, Wildschwein solltest Du in jedem Fall eine Chance geben.<\/p>\n<h2>Wildschwein \u2013 ein wenig \u201egraue Theorie\u201c<\/h2>\n<p>Wie immer beginnen wir auch beim Wildschwein mit ein paar Hintergrundinfos. Das Wildschwein (Sus scrofa) ist eine eurasische Art aus der Familie der Echten Schweine und von Spanien bis Japan verbreitet. Weibliche Tiere werden als Bache, die m\u00e4nnlichen Wildschweine als Keiler bezeichnet.<\/p>\n<p>Die K\u00f6rpergr\u00f6\u00dfe ausgewachsener Tiere liegt bei 170 cm bis 180 cm (K\u00f6rperl\u00e4nge), Keiler erreichen ein Gewicht von bis zu 200 Kilogramm. Allerdings scheinen Wildschweine \u2013 sofern keine Bejagung stattfindet \u2013 noch deutlich gr\u00f6\u00dfer zu werden. Quellen sprechen von Tieren mit mehr als 300 Kilogramm Gewicht.<\/p>\n<p>Wildschweinfleisch, das heute in den Handel kommt, stammt weitgehend aus der Jagd. Nach dem Reh sind Wildschweine das jagdbare Haarwild schlechthin. Allein in der Saison 2011 wurde mehr als eine halbe Million Tiere erlegt.<\/p>\n<h2>Wildschwein \u2013 das Fleisch<\/h2>\n<p>Das Fleisch von Sus scrofa erf\u00fcllt die klassischen Anforderungen an Wild. Es ist wesentlich dunkler als das Fleisch vom Hausschwein und fett\u00e4rmer. Daher erfordert es auf dem Grill ein gewisses Fingerspitzengef\u00fchl.<\/p>\n<p>Von Natur aus zart, kannst Du mit einer Marinade dem Fleisch noch mehr auf die Spr\u00fcnge helfen und l\u00e4sst den Wildgeschmack in den Hintergrund treten. Unser Tipp: Wildschwein l\u00e4sst sich hervorragend in einer Bacon Bomb verarbeiten oder wird als Pulled Pork zu einem Gedicht.<\/p>\n<p>Willst Du Dein Wildschwein richtig scharf anbraten?
