Kein Wunder also, dass gerade Grillfans als sehr experimentierfreudig gelten. Die Bacon Bomb oder das H\u00e4hnchen auf der Dose sind nur zwei Gerichte, die eine wachsende Fangemeinde begeistern. Speck \u2013 und vor allem Bacon \u2013 sind auf dem Grillrost also schon lange keine unbekannten G\u00e4ste mehr. Was ist aber Lardo? Viele Griller werden hier mit den Schultern zucken.<\/p>\n<h2>Lardo \u2013 eine Spezialit\u00e4t vom Schwein<\/h2>\n<p>Eigentlich ist Lardo nicht anderes als R\u00fcckenspeck vom Schwein. Allerdings handelt es sich hierbei nicht um irgendein Schwein und auch nicht um irgendeine Herstellungsart. Damit R\u00fcckenspeck zum Lardo wird, m\u00fcssen zwei Bedingungen erf\u00fcllt sein.<\/p>\n<p>Ersten muss das Schwein einen ausreichend dicken R\u00fcckenspeck liefern und zweitens braucht das Ausgangsmaterial f\u00fcr Lardo eine besondere Behandlung. Da f\u00fcr diese Spezialit\u00e4t eine gewisse Dicke der Speckschicht erforderlich ist, werden f\u00fcr die Lardo-Herstellung in aller Regel nur Schweinerassen mit ausgepr\u00e4gter Fettschicht verwendet.<\/p>\n<p>Dazu geh\u00f6ren beispielsweise fettreiche Landschweine wie das Mangalica. Nach der Schlachtung und der Fleischbeschau wird der Speck ausgel\u00f6st und kann anschlie\u00dfend auf zwei Wegen verarbeitet werden. Entweder ganz klassisch, indem Salz und Kr\u00e4uter zwischen mehreren Schichten Speck verteilt werden und das Ganze beschwert wird. Oder das Salz zieht mit der Vakuummethode in den Speck ein.<\/p>\n<h2>Lardo \u2013 zart schmelzend und nussig<\/h2>\n<p>Guter Lardo reift etwa drei Monate bis sechs Monate und hat anschlie\u00dfend eine wei\u00dfe bis rosa Farbe. Der Geschmack ist nussig, die Konsistenz zart schmelzend. Obwohl in den vergangenen Jahre fast in Vergessenheit geraten, wird Lardo derzeit auch rund um den Grill wiederentdeckt.<\/p>\n<p>Als Topping aufs Steak oder d\u00fcnn geschnitten ums Kalbsfilet gelegt \u2013 Lardo verleiht den Gerichten eine salzige Note, der Ihr nicht widerstehen k\u00f6nnt.<\/p>\n<p>\u00dcbrigens: Hochwertiger Lardo kommt zwar immer noch aus Italien.
