Dann haben wir genau das Richtige: In diesem Beitrag geht es um eine spezielle Schweinerasse, von der man in Zukunft wahrscheinlich des \u00d6fteren etwas h\u00f6ren wird. Die Rede ist von Limburgs Kloostervarken. Keine Ahnung, was das ist?<\/p>\n<p>Hinter dieser etwas eigent\u00fcmlichen Bezeichnung steckt die R\u00fcckbesinnung einiger niederl\u00e4ndischer Schweinez\u00fcchter auf Traditionen. Das Ergebnis ist eine Schweinerasse, die es in dieser Form fr\u00fcher h\u00e4ufiger gegeben hat.<\/p>\n<p>Wie in Deutschland sind die klassischen Rassemerkmale der Schweine aber zunehmend in den Hintergrund getreten. Mit dem LiVar r\u00fccken Z\u00fcchter Eigenschaften wie Geschmack, artgerechte Haltung an frischer Luft und Auslauf wieder in den Mittelpunkt.<\/p>\n<h2><b>LiVar \u2013 Freilandhaltung und Getreidefutter<\/b><\/h2>\n<p>Gez\u00fcchtet wird das LiVar in der Abtei Lilbosch (Provinz Limburg) aus Kreuzungen verschiedener Rassen. So taucht im LiVar das Rotbunte Husumer Schwein genauso auf wie das Schw\u00e4bisch-H\u00e4llische Schwein oder Essex- und Duroc-Schweine.<\/p>\n<p>Diese vielen verschiedenen Rasseeinkreuzungen sorgen daf\u00fcr, dass beim LiVar ganz verschiedene Farben und Rassemerkmale auftauchen \u2013 vom r\u00f6tlichen Stich des Rotbunten Husumer Schweins bis zu den Schlappohren des Schw\u00e4bisch-H\u00e4llischen Schweins.<\/p>\n<h2><b>Limburgs Kloostervarken \u2013 das Fleisch<\/b><\/h2>\n<p>Das LiVar ist aus einer Besinnung auf Geschmack und Qualit\u00e4t entstanden. Deshalb werden die Tiere in der Abtei Lilbosch auch nicht auf Masse getrimmt. Es geht den Z\u00fcchtern vielmehr darum, Qualit\u00e4t auf den Teller zu bringen. Dank der Haltung entsteht ein Fleisch mit etwas dunklerer Farbe, einer feinen Marmorierung und einem besonderen Eigengeschmack. Neugierig geworden?
