Beim Rindfleisch sind Wagyu-Beef oder Bison Highlights, die sich in den vergangenen Jahren zu echten Trendsettern entwickelt haben. Wie sieht es aber beim Schwein aus? Letzteres ist vielen Grillern vor allem in Form von Spareribs oder als Pulled Pork bekannt. Dabei ist Schwein viel mehr \u2013 und h\u00e4lt \u00dcberraschungen bereit. Deshalb soll es heute wieder um einen besonderen Zeitgenossen gehen. Die Rede ist vom Iberico-Schwein.<\/p>\n<p>Manchem Genie\u00dfer eher bekannt als Cerdo Ib\u00e9rico oder Porco ib\u00e9rico, handelt es sich um eine Schweinerasse, die sich in ihrer Heimat nach wie vor relativ frei bewegen kann. Als Weideschwein in den Oliven- oder Eichelhainen gehalten, haben die halbwilden Schweine ihren ganz typischen Look entwickelt.<\/p>\n<h2><b>Cerdo Ib\u00e9rico \u2013 Fleischlieferant bereits in der Antike<\/b><\/h2>\n<p>Das Cerdo Ib\u00e9rico geh\u00f6rt zu den urspr\u00fcnglichen Schweinerassen, denen man das \u201ehohe Alter\u201c der Rasse durchaus ansieht. Besonders kennzeichnend ist die dunkle Farbe, welche vom Schwarz bis Grau reicht \u2013 und der Rasse auch die Bezeichnung Pata Negra eingebracht hat. Hinsichtlich des Alters der Rasse Cerdo Ib\u00e9rico wird heute davon ausgegangen, dass sie bereits in der Antike bekannt war und als Fleischlieferant genutzt wurde.<\/p>\n<p>Nach dem 2. Weltkrieg in den 1960er Jahren seltener geworden, ist die Akzeptanz vieler Verbraucher in letzter Zeit wieder deutlich gewachsen. Das Fleisch mit der typischen Marmorierung &#8211; durch Fettadern und das Hautfett &#8211; erreicht seinen typischen Eigengeschmack auch aufgrund einer besonderen Ern\u00e4hrung.<\/p>\n<p>Fleischst\u00fccke vom Cerdo Ib\u00e9rico lassen sich auf dem Grill auf ganz unterschiedliche Weise zubereiten \u2013 etwa als Karree oder Rippchen. Wir sind uns aber schon jetzt sicher, dass Euch der au\u00dfergew\u00f6hnliche Geschmack, den das Cerdo Ib\u00e9rico mitbringt, \u00fcberzeugen wird.
