Denn der <strong>Bauchlappen<\/strong> oder das <strong>&#8222;Skirt<\/strong>&#8220; \u2013 wie das <strong>Flank Steak<\/strong> hierzulande auch gern genannt wird \u2013 ist eigentlich kein typisches Grillsteak. Vielmehr kennt Ihr das Fleisch aus der Bauchdecke des Rinds eher als Wurst, Suppenfleisch oder in Form von Rollbraten. Anders in den USA. Hier ist ein Skirt durchaus auch auf dem Grillrost zu finden. Warum das so ist? Hintergrund: Die Region, aus der ein Flank Steak idealerweise geschnitten wird (n\u00e4mlich der Bauch), arbeitet viel. Der Muskel ist deshalb besonders gut entwickelt und enth\u00e4lt einen <strong>hohen Anteil Bindegewebe<\/strong>. Im Vergleich zu anderen Fleischst\u00fccken kann es also <strong>schneller \u00fcbergar<\/strong>t werden. Medium bzw. medium-rare wird daher des \u00d6fteren als der Gargrad angesehen, mit dem das Flank Steak auf Ihrem Teller landen sollte. Um den Garpunkt wirklich perfekt zu treffen, empfehlen wir daher das Grillen mit einem <a href=\"https:\/\/www.santosgrills.de\/grillzubehoer\/grillthermometer\/\"><strong>BBQ-Thermometer<\/strong><\/a>.<\/p>\n<h2>Das Flank Steak und seine Zubereitung<\/h2>\n<p>Und noch etwas macht die Zubereitung des Flank Steaks so schwierig: Die <strong>lange Fleischfaser<\/strong> kann zum Problem werden, wenn Ihr das Fleisch falsch anschneidet. Um besonders zarte Abschnitte auf den Grilltellern anrichten zu k\u00f6nnen, ist es daher nach dem Ruhen immer quer zur Faser zu schneiden.
