Hintergrund: Der Zentralverband der Deutschen Gefl\u00fcgelwirtschaft hat uns den ersten \u201eGefl\u00fcgel-Atlas\u201c beschert. Das verbl\u00fcffendste Ergebnis ist die Tatsache, dass Sachsen-Anhalt Spitzenreiter bei der Zubereitung auf dem Grill ist. Knapp<!--more--> ein Drittel der Gefl\u00fcgelgerichte wird hier auf dem Rost zubereitet.<\/p>\n<p><b>Hamburg beim Grillen Schusslicht<\/b><\/p>\n<p>Beim Grillen von Gefl\u00fcgel hat uns aber auch das Schlusslicht \u00fcberrascht \u2013 Hamburg. Die hippe Elbmetropole steht mit gerade einmal sechs Prozent auf dem letzten Platz. Aber schlie\u00dflich haben die Hamburger mit Fisch eine gesunde Alternative.<\/p>\n<p>Was sagt uns der \u201eGefl\u00fcgel-Atlas\u201c noch? 92 Prozent der Befragten sch\u00e4tzen Gefl\u00fcgel wegen des gesunden Beitrags zur Ern\u00e4hrung. Und den Verbrauchern aus Bayern liegt die Herkunft des Fleischs ganz besonders am Herzen.<\/p>\n<p><b>Gefl\u00fcgel grillen \u2013 ganz abseits der Statistik<\/b><\/p>\n<p>Unser Fazit: Gefl\u00fcgel wird gern gegessen. Auch wenn die Unterschiede je nach Bundesland betr\u00e4chtlich sind \u2013 auch bei uns in K\u00f6ln kommen H\u00e4hnchen und Co. immer wieder gern aufs Rost. Was sollte man dabei aber besonders beachten? Gerade Einsteiger machen hin und wieder lange Gesichter, wenn Gefl\u00fcgel beim Anschneiden \u201etotgebraten\u201c ist.<\/p>\n<ul>\n<li>Gefl\u00fcgel erst sp\u00e4t salzen: Salz entzieht Fleisch Fl\u00fcssigkeit. Daher sollte Gefl\u00fcgel erst sp\u00e4t, etwa nach dem Grillen gesalzen werden.<\/li>\n<li>Gefl\u00fcgel nicht zu lange marinieren: Aus dem gleichen Grund wie beim Salzen ist es sinnvoll, Gefl\u00fcgel nicht \u00fcber die vorgesehene Dauer zu marinieren.<\/li>\n<li>Durchgaren ist unbedingt Pflicht: Gerade beim Gefl\u00fcgel besteht die Gefahr \u2013 sofern das Fleisch nicht komplett durchgegart wird \u2013 einer Infektion.<\/li>\n<li>Hautfett macht Gefl\u00fcgel saftig: H\u00e4hnchenbrust und Co. kommen ohne Haut auf den Grill.
